The location was somewhat hidden away, and was quite difficult to find information on the event itself.  But I think it was the right number of people.  Enough to make it a great day out, but without the crowd crush.

Will definitely go back next year.

It's always difficult coming back to a full week of work after two weeks of not doing much at all over the Christmas/New Year break.  After all those sleep ins, being lazy, mid morning/mid afternoon swims at the beach, how am I going to keep myself motivated?

I've got a great all around cupcake/muffin mix that will go down a treat in keeping my energy levels up at work this week.

Preheat the oven to 190.  Grease or line 12 cupcake moulds.

Go and commandeer:

  • Salted butter, room temp
  • 1 1/2 tsp baking powder
  • 2 cups flour
  • pinch of salt
  • 1 cup sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 1/2 cup of milk
  • 1 1/2 cups of chocolate chips (dark)/strawberries/etc..

Sift together the flour, baking powder and salt.  In a separate bowl whip up the butter slightly then add the sugar. Continue mixing until it is light and fluffy.  Add eggs one at a time, before adding the vanilla extract.

Add the flour and milk to the butter mixture in small batches, and mix until just combined.  Slowly fold in your chocolate chips/strawberries.  Divide evenly between the 12 moulds.

Bake for 30 minutes until the tops are golden brown.

Icing:

  • 150g butter, softened
  • 2 1/4 cups pure icing sugar
  • 2 tablespoons milk
  • your choice of food colouring

Using a whisk, beat butter in a bowl until pale. Gradually add icing sugar and milk, whisking constantly until combined.
